For the vanilla sponge cake recipe, I used this recipe from the book: Bake Essential Companion by Alison Thompson (link to the book: http://www.angusrobertson.com.au/books/bake-alison-thompson/p/9780143203674 ).
250 grams caster sugar
pinch salt (my addition)
1 teaspoon vanilla extract (also my addition, not included in the original recipe)
250 grams plain / all purpose flour
80 grams butter, melted
bake at 170 degrees Celsius (or 340 degrees Fahrenheit)
FOR THE BUTTERCREAM:
i used a half stiff cream cheese frosting recipe, which is half buttercream half cream cheese frosting. .

200 grams butter
150 grams cream cheese frosting
800 grams icing sugar
1 - 2 tablespoons milk
FOR THE CHOCOLATE:
70 grams white chocolate
2 tablespoons copha / melted coconut oil
8 drops or so of Americolour flo-coat
FOR THE SUGAR SYRUP:
1 cup water
1 cup sugar
2 tablespoons Cherry Brandy
